Dayelet Gluten Free Sourdough.

This sourdough is the key to making high-quality bread at home.

This is a sourdough made from organic crops from natural sources and which has been dried, preserving all the acidic and aromatic compounds of traditional breads.

Dayelet's gluten-free sourdough adds acidity to the dough and highlights the taste of homemade bread, and also prolongs the preservation of the bread once it is finished.

For its direct dosage together with the flour, it is used in doses of 5 to 10% on it.

In its proper proportion, it gives the bread a more rustic and artisanal appearance, and its end result is the improvement of the texture and flavor of the bread.

In the production of this sourdough, organic ground rice from natural yeast cultivation is used, which is refreshed daily, in a gluten-free process.

 

Gluten free, sugar free, lactose free, egg free, soy free, nuts and salt free.

 

How to use:

If we want to prepare a foot of fresh sourdough to add to our usual recipe, we proceed as follows: mix well first, a quantity of GLUTEN-FREE MOTHER DAYELET MASS with half the water and a little fresh yeast. After a few hours of fermentation, we add 10% of this first mixture with ten times more of DAYELET FLOUR WITHOUT GLUTEN and approximately the same weight of water, then a little salt and again the fresh yeast. We knead everything and let it rest in a covered bowl. When you have doubled the volume, you can add this fresh sourdough to the recipe you want to make in proportions ranging from 10 to 20%. Your breads and rolls will seem to you from another world.
