Dayelet's CMC powder texturizer, cellulose gum, a vegetable thickener.
CMC is a polysaccharide derived from the cell walls of woody plants and is not soluble in water.
It works very well as a strong thickener in wide applications due to its great hydration capacity and its very high viscosity.
It comes in the form of a white powder and dissolves both cold and hot, with strong stirring.
Provides elasticity to the fondant to obtain a good gum paste, preventing it from sticking (drying property).
In cupcakes, with half a small spoonful per 250g of fondant it is enough to knead it and shape it well.
It is a product that has been used for many years in all kinds of food and beverages because it provides a neutral structure that stabilizes the liquid content and also creates transparent and thermo-reversible gels.
This texturizing powder, when cold, acts as a thickening rubber and when hot as a gelling agent, and prevents the sugar from crystallizing.
It hydrates properly at room temperature.
For the formation of gels it must be heated between 40 / 60º C. It works well between pH 5 to 11, and also with liquors of more than 40º.
Stabilizes the foam of proteins.
Its use doses can be minimum as a thickener between 0.1% and 0.5%, and maximum as a gelling agent between 1% and 2%.
Its creative applications include: fondants and glues, and paste for modeling flowers and decorative figures, cupcakes, clouds, foams and juices, thick sauces, chewing gum, ice creams, meringues, hot and cold drinks, salty fillings, tempuras, donuts, waffles , meringues, reconstructions of purees, etc.
