Neutral stabilizer for the production of Dayelet's cream and milk ice cream.

This is a stabilizer and aerator for ice cream with or without sugar.

An essential texture agent to stabilize and retain liquids in the entire range of cream ice creams.

Its use totally or partially replaces the traditional egg yolks, thus achieving a lighter, less dense, colder ice cream with a notable reduction in cholesterol.

Its basic composition is a synergistic mixture of three vegetable gums that act as: thickeners, increasing the viscosity of the mixture; emulsifiers, to incorporate more air into the ice cream; stabilizers, avoiding crystallisations and giving the ice cream texture, body and fusion.

This neutral stabilizer for ice cream production is composed of three vegetable gums: guar gum, which is extracted from the seeds of the guar legume plant; Tara gum, which is obtained from the seeds of the tara legume plant and cellulose gum, derived from the cellulose contained in the stem of plants.

They are thus three soluble polysaccharides with a great capacity for hydration and stabilization of liquids, which are used in a very extended number of foods and also in dietetics.

 

Gluten-free, lactose-free, egg-free, soy-free, and nut-free.

How to use: this stabilizer is applied in doses of 2%, that is to say, 20 g per liter of mix.

 

Average glycemic index = 50.
