A salt that is mainly magnesium chloride, and in this case the magnesium chloride subsequently forms the Natrium Chloride crystals.
This salt is rich in minerals and trace elements.
The seawater is filtered and concentrated forming the Natrium chloride crystals, these crystals being separated from the water with the help of a centrifuge.
The water is heated and then cooled so that the magnesium chloride crystals settle.
The formed layer of Nigari is then broken into pieces, achieving this type of salt of the highest quality.
How to use: As a tofu coagulant. The ratio is one teaspoon (15 g) for every liter of soy drink.
Conservation: Store in a cool place (below 18ºC), dry and protected from sunlight.
